Chop chop hummus salad
This quick and easy recipe is the perfect snack or side dish, packed with plant-based protein and healthy greens.
Ingredients500g store bought hummus 3 Lebanese cucumbers, deseeded and roughly chopped 6 radishes, trimmed and roughly chopped 1 small stalk of celery, thinly sliced on a diagonal 1 tbsp finely chopped dill 1 tbsp finely shredded mint drizzle of olive oil squeeze of lemon juice salt flakes Seed mix: 1 tsp oil 1 tbsp pumpkin seeds 1 tbsp sunflower seeds 1 tbsp pine nuts Garnish: 1 tsp sumac 1 tsp zaatar extra chopped dill & mint olive oil |
MethodStep 1. Place cucumber, radish and celery in a bowl. Season with salt. Step 2. Add chopped dill and mint. Drizzle, drizzle with olive oil and squeeze over lemon juice. Toss. Taste Toss, taste and adjust seasoning if needed. For the seed mix, heat oil in a small non- stick fry pan. Gently toast seeds and pine nuts until golden. Step 4. To assemble, schmear hummus onto a serving plate. Spoon vegetable mix over hummus. Sprinkle over seed mix and garnish with sumac, zaatar, extra dill and mint. Drizzle with olive oil. Serves 4-6. |
