Luke Hines’ Gorgeous Green Salad
This really simple but slightly different take on a classic garden salad is the ultimate crowd pleaser. Make just before serving to keep the creamy avo dressing nice and fresh.
Ingredients
- 1 bunch of flat-leaf parsley, leaves picked
- 1 bunch of mint, leaves picked
- 1 bunch of dill, sprigs picked
- 1 bunch of chervil, sprigs picked
- 1 loosely packed cup picked watercress sprigs
- 1 loosely packed cup baby rocket leaves
- 1 butter lettuce, leaves separated, torn
- 2 tbs pumpkin seeds, toasted, finely chopped
Avocado Dressing
- 125 ml (1/2 cup) extra-virgin olive or avocado oil
- 1 avocado
- 1 handful of coriander leaves
- 1 tbs apple cider vinegar
- 1 tsp chilli powder
- Finely grated zest and juice of 1 lime
- Pinch of sea salt

Method
Step 1.
For the avocado dressing, blitz all the ingredients in a food processor until smooth and creamy.
Step 2.
Add all the salad ingredients in a large bowl and toss to combine, then gently toss through the dressing. Serve immediately.
