Vegan energy balls

Sweetened with dried apricots and full of healthy fats, these tasty snacks are sure to please. Best of all, there is no cooking involved.  

Ingredients

100g cashews

50g almonds

150g dates

100g dried apricots

2 tbsp chia seeds

3 tbsp coconut flakes

1 tbsp linseeds

 

 

Method

Step 1.

Coarsely chop the cashews with the almonds in a blitz chopper. Cut the dates and apricots into small pieces and add both to the chopper, together with the chia seeds, 2 tbsp coconut flakes and the linseeds. 

Step 2.

Grind everything into a malleable paste, adding 1-2 tsp water as needed. 

Step 3.

Shape into approx. 20 small balls and chill on a tray for about 30 minutes. Sprinkle on the remaining coconut flakes before serving.

Makes 18-20 balls.
