Anti-inflammatory turmeric and blueberry muffins
These nutrient-packed muffins boast powerful antioxidant and anti-inflammatory properties. This delicious recipe can help boost your immune system, ease joint pain and heal your gut.
Ingredients
- 2 large eggs
- 350 g soft light brown sugar
- 150 g salted butter; melted
- 375 ml whole milk
- 3 fresh figs; diced
- 200 g blueberries
- 50 g walnuts; chopped
- 50 g rolled porridge oats; plus extra for sprinkling
- 500 g self-raising flour
- 1/2 tsp ground turmeric

Method
Step 1. Preheat the oven to 170C (150C fan) and grease a large 12-hole silicone muffin mold.
Step 2. Beat the eggs in a large mixing bowl with the sugar, melted butter and milk until smoothly combined.
Step 3. Toss the fruit, nuts and oats with the flour and turmeric, then fold everything into the egg mixture, stopping as soon as it is all roughly combined.
Step 4. Divide the mixture between the paper cases and sprinkle with a few extra oats. Bake in the oven for 30 minutes or until a skewer inserted in the centre of a muffin comes out clean.
Step 5. Transfer the muffins to a wire rack and leave to cool completely before serving.
