Sweet nut bread with zucchini and apple sauce

MethodStep 1. Preheat the oven to 180C. Grease a 30cm loaf tin with butter and dust lightly with flour. Step 2. Grate one zucchini very finely. Squeeze out the water. Finely grind about 75g walnut kernels and coarsely chop another 50 g separately. Step 3. Mix the flour with the baking powder, cinnamon and salt. Mix together the eggs, sugar and oil and gradually add the flour mixture. Mix well until a smooth dough is formed. Step 4. Finally, stir in the ground and chopped walnuts and grated zucchini and pour the batter into the tin. Bake for about 50 minutes until golden and a skewer inserted into the centre comes out clean. Step 5. For the apple sauce, peel, core and chop the apples. Put in a pan with the sugar, lemon juice and cinnamon. Pour in 50ml water and simmer, covered, for about 10 minutes. Purée or mash finely and leave to cool. Step 6. Allow the loaf to cool slightly, then remove from the tin and leave to cool completely. Spiralise the remaining zucchini to make vegetable noodles and arrange on the bread with the remaining walnuts. Step 7. To serve, cut into slices and serve with the apple sauce. |
