Recipe: Greens with avo and goat’s cheese

The classic combination of lettuce, avocado and goat’s cheese will make this your favourite new salad to serve the whole family.

Ingredients

120g mixed lettuce leaves 

1 red capsicum, thinly sliced and cut into 2cm pieces 

1 punnet cherry tomatoes, quartered 

4 spring onions, finely sliced

 1½ avocados, diced 

3 cubes Meredith goat cheese, crumbled 

Dressing: (makes enough for 2 salads) 

¼ cup olive oil (we use oil from goats cheese) 

1 tsp Dijon mustard 

1 tbspn balsamic vinegar 

½ tsp soy sauce 

½ tsp Worcestershire sauce 

2 tsp Japanese mayonnaise (or whole egg mayo) 

squeeze of lemon juice 

½ clove garlic, crushed 

Method

Step 1.

Place all salad ingredients in a large bowl. 

Step 2.

Place dressing ingredients in a bowl and whisk until well combined. 

Step 3.  

Just before serving, drizzle with as much dressing as desired. Toss well. 

 Serves 4-6.
