Spinach, radicchio and fig salad
Put together a beautiful plate of greens, coloured by a sweet honey-like edge from the figs, perfect for a healthy lunch or dinner on a busy day.
Ingredients2 large handfuls baby spinach 1 small head radicchio, sliced or torn 4 figs, quartered 1/2 cup mint leaves 1/2 cup toasted walnuts (candied if desired – do this by roasting with honey or maple syrup) 1/2 cup shaved feta or ricotta salata A generous pinch of Maldon salt 4 tbsp olive oil 2 tbsp balsamic vinegar 2 tsp honey |
MethodStep 1. Place spinach, radicchio and mint in a serving bowl. Step 2. Top with figs, nuts and cheese. Sprinkle with salt. Step 3. Drizzle over oil, vinegar and honey. Serves 4-6. |
