Recipes: Luke and Zoe’s smoothie battle

Luke Hines’ Chocolate Strawberry Thickshake

Ingredients

2 cups frozen strawberries 

1/2 cup tinned coconut milk

1/2 cup raw rolled oats

1/2 cup ice cubes

4 large fresh strawberries, to garnish (either diced or sliced into a fan)

80g dark chocolate

Method

Step 1.

Melt the chocolate in a small bowl, using half to line the inside of a large, chilled, wide, tall glass, and reserve the other half to garnish.

Step 2.

For the thick shake, combine the frozen strawberries, coconut milk, rolled oats and ice in a powerful blender and blitz until well combined, thick, smooth and creamy. 

Step 3.

Pour into the tall glass, then top with some roughly chopped fresh strawberries and drizzle with the remaining chocolate before serving.

Zoe Bingley-Pullin’s Blueberry Smoothie with Avocado ‘Mousse’ 

Ingredients

For the smoothie:

200ml oat milk or coconut water

1 cup blueberries, fresh or frozen

1 small frozen banana

½ tbsp whole rolled oats

Handful fresh mint leaves

For the avocado mousse:

½ small avocado, skin and pip removed

1-2 tbsp oat milk

½ tbsp lime juice

1 tsp honey – adjust to suit

Mixed nuts and seeds & mint leaves to top

Method

Step 1.

To make the smoothie, add all of the ingredients to a blender and blend until smooth.

Step 2.

Pour into the base of a tall glass, fill up ¾ of the way. 

Step 3.

Add all of the avocado mousse ingredients into a blender and blend until smooth, adjust sweetness to suit.

Step 4.

Spoon the avocado mousse onto the blueberry smoothie in the same glass and sprinkle with mixed nuts/seeds and mint leaves.
