Dairy-free brownies

Looking for an easy vegan treat for your kids? Pack their school lunch box with these dairy-free brownies, sure to brighten their day in between classes.

Ingredients

60g ground linseeds or flaxseeds

180g brown sugar

50 ml avocado oil

1 tsp vanilla extract

125g teff flour

60g vegan cocoa powder

2 pinches salt

2 1/2 tbsp hemp seeds; for sprinkling

1 tbsp edible flowers; e.g. dried rose petals

Method

Step 1.

Preheat the oven to 180°C. Line a square baking tin (approx. 20 x 20 cm) with baking paper.

Step 2.

In a mixing bowl, mix the ground linseeds or flaxseeds with 120 ml warm water and leave to soak for 5-10 minutes. Stir in the sugar, avocado oil and vanilla extract. Mix the teff flour, cocoa powder and salt in a second bowl. Add the dry ingredients to the wet ingredients and mix briefly to combine.

Step 3.

Pour the batter into the tin, spread level, sprinkle with hemp seeds and press them in lightly. Bake for 30-35 minutes until a skewer inserted into the centre comes out clean. While still hot, sprinkle with rose petals and leave to cool. Cut into squares to serve.
