Zoe Bingley-Pullin’s Banana Leaf Steamed Snapper with Zesty Broccolini
Ingredients4 x 150g snapper fillets 2 tbsp soy sauce 1 tbsp sesame oil 1 tbsp lime juice 1 tbsp ginger, grated 1 red chilli, sliced 2 bunches broccolini, ends trimmed Juice and zest of 1 lime Extra virgin olive oil Sesame seeds, toasted Salt and pepper, to taste |
MethodStep 1. To prepare the marinade, mix the soy sauce, sesame oil, lime juice, ginger and chilli in a bowl before setting aside. Step 2. Place each portion of snapper in the centre of a piece of banana leaf or parchment paper and top with soy marinade before enclosing. If using banana leaf, you can use a kitchen twine to help secure the leaf closed. Step 3. Place a bamboo steamer over a wok or a frying pan that is filled halfway with water. Then, place the snapper parcels into the steamer and let steam for approximately 10 minutes or until the fish is cooked through. Step 4. Generously coat the broccolini with olive oil and place on a heated griddle pan over medium-high, cooking for approximately 10 minutes while turning often as it begins to char. Remove from the heat and plate up with a drizzle of lime juice, lime zest, sesame seeds and season to taste. If the sesame seeds aren’t already toasted, add to a medium-high heated pan and gently stir until they start to darken before removing. Step 5. Serve the steamed snapper alongside the broccolini. |
