Zoe Bingley-Pullin’s oysters with pink grapefruit salsa

Ingredients

1 dozen oysters

1 pink grapefruit, skin removed, finely diced

1 red chill, finely sliced

1 cucumber, de-seeded and finely chopped

½ tbsp coconut water

1 tbsp coriander, finely chopped

1 tsp lime zest

freshly cracked salt and pepper

Method

Step 1. 

Combine all ingredients in a bowl, except the oysters, mix well and season to taste.

Step 2.

Arrange oysters on a serving plate, divide the salsa mix among the oysters and serve.
