TikTok’s viral crispy Mexican corn ribs recipe
Have you tried social media’s viral crispy Mexican corn ribs yet? Luke Hines’ recipe is a deliciously spicy and irresistibly crunchy take on the popular vegetarian street food.
Ingredients2 corn cobs 1 tbsp extra virgin olive oil 1 tbsp Mexican seasoning 3 tbsp mayonnaise 1 tbsp chilli sauce Juice of 1 lime ¼ tsp sea salt 2 tbsp finely chopped coriander Serves 1 |
MethodStep 1. Preheat the oven to 200C and line a baking tray with baking paper. Step 2. Stand each corn cob on a chopping board, larger end down, then, carefully with a chef’s knife, cut in half lengthways, then in half again, so you have four “ribs”. Set aside. Step 3. Combine the olive oil and Mexican seasoning in a small bowl and mix well. Brush it over the corn ribs to evenly coat then toast for 25-30 minutes, or until golden brown, curly and crispy. Step 4. Meanwhile, to make the spicy chilli dipping sauce, whisk together mayonnaise and chilli sauce. Step 5. Plate up the crispy corn ribs, top with a generous squeeze of lime juice, a sprinkle of coriander and a good season of sea salt. Serve with spicy chilli mayo. Pro tip: These Mexican corn ribs also work a treat cooked in an air fryer at 200C for 15 minutes, turning halfway through. |
