Luke Hines’ San Choy ‘Bow Wow’

Ingredients

500g chicken mince

1 cup brown rice

2 cups baby spinach, roughly chopped

1 carrot, grated

1 zucchini, shredded

1 cup frozen peas, defrosted

1 tbsp hemp seed oil, to garnish

Lettuce cups for presentation

Method

Step 1.

Lightly pan fry the chicken mince until cooked, cook the rice and prep all the vegetables.

Step 2.

Similar to a deconstructed salad, arrange all listed ingredients into separate sections on a wide flat bowl. Drizzle with hemp seed oil then toss well to combine.

Step 3.

As a fun serving suggestion, the mixture can be scooped into little lettuce cups. Hence the name, San Choy Bow Wow!
