Luke Hines’ San Choy ‘Bow Wow’
Ingredients500g chicken mince 1 cup brown rice 2 cups baby spinach, roughly chopped 1 carrot, grated 1 zucchini, shredded 1 cup frozen peas, defrosted 1 tbsp hemp seed oil, to garnish Lettuce cups for presentation |
MethodStep 1. Lightly pan fry the chicken mince until cooked, cook the rice and prep all the vegetables. Step 2. Similar to a deconstructed salad, arrange all listed ingredients into separate sections on a wide flat bowl. Drizzle with hemp seed oil then toss well to combine. Step 3. As a fun serving suggestion, the mixture can be scooped into little lettuce cups. Hence the name, San Choy Bow Wow! |
Zoe Bingley-Pullin’s Anti-Inflammatory Raw Biscuits
Ingredients1 cup hemp seeds 1 cup blanched almond meal 2 cups shredded coconut 1/2 cup dates, pip removed 1 tsp turmeric powder 1 tsp sea salt |
MethodStep 1. Place all ingredients into a food processor and mix until well combined. Step 2. Roll a heaped tablespoon of mixture into balls or flatten using hands. Then, use a paw cookie cutter to cut into paw shapes. Step 3. Place into an airtight container and refrigerate. |
