Recipe: Strawberry and coconut smoothie with beetroot

Ingredients40g beetroot 250g strawberries 650ml coconut water 4 tbsp maple syrup 1 tbsp desiccated coconut extra coconut water

MethodStep 1. Wash and peel the beetroot and cut into pieces. Clean the strawberries. Step 2. Put both in a blender with the coconut water and maple syrup and blend on low speed, then on high speed for 30 seconds until creamy. Step 3. Place the coconut on a small plate. Dip the rims of four glasses in coconut water and then dip them into the coconut. Step 4. Divide the smoothie between the glasses and serve immediately. Serves 4. |
