Recipe: Frozen yoghurt bites with raspberries

Use fresh raspberries to make these cool yoghurt bites that the kids will love as a refreshing summer snack.      

Ingredients

200g raspberries

2 1/2 tbsp lemon juice

200g Greek yoghurt

sweetener; to taste

120ml double cream

 

Method

Step 1. 

Puree half of the raspberries with the lemon juice and pass through a sieve to remove the seeds.

Step 2.

Mix the yoghurt with the remaining raspberries and the raspberry puree and sweeten to taste.

Step 3.

Whip the cream until stiff and fold in. Pour the mixture into a 24-hole mini muffin tray, spread level and freeze for about 3 hours until firm.

Step 4.

Dip the tray briefly in hot water and turn the raspberry bites out of the moulds. Spread out on a tray and freeze again until ready to serve.

Makes 24 bites.
