Black Rice Pudding

Lusciously laced with coconut and sea salt, this Asian pudding recipe from Forbidden Foods is good for the soul – and your taste buds.

Ingredients

  • 1 cup black rice
  • ½ tsp sea salt
  • 2 cups water
  • ½ cup chopped palm sugar with ½ cup of water
  • 200ml coconut cream
  • Seasonal fruit, to garnish
  • Pandan leaves, optional

Method

Step 1.
Place rice, pandan leaves (optional), salt and water in a heavy-based pot. Bring to the boil and simmer on medium heat.

Step 2.
Meanwhile, grate the palm sugar and add to the water. Bring to the boil and simmer until the sugar dissolves (about five minutes). When the rice has been cooking 20 minutes, add the syrup and cook for another 10 minutes.

Step 3.
Serve warm with cold coconut cream and fresh colourful fruit.
